
Since Clay likes to document our cooking experiments, like the
strawberry tart a few weeks ago, I shrunk this morning's cheese
making process down a little bit for you all to see.
We used Smith Creamery milk and a recipe from a Mario Batali book.
Basically: bring milk to a boil, add vinegar to separate, stir to
make curds and whey, strain. Eaten still warm on a piece of toasted
bread is heaven. The rest of it is going in some lasagna tonight.
